One tablespoon olive oil
Two skinless, boneless chicken breast halves – cut into chunks
Half onion, chopped
Three cloves garlic, minced
One small butternut squash, peeled and chopped
One can garbanzo beans, drained and rinsed
One carrot, peeled and chopped
One can diced tomatoes with juice
One can vegetable broth
One tablespoon sugar
One tablespoon lemon juice
One teaspoon salt
One teaspoon ground coriander
One dash cayenne pepper


1. Take a large skillet,heat the olive oil over medium heat, and cook the onion, chicken and garlic for 15 minutes, until it turned into brown.
2. Combine garbanzo beans, the squash, tomatoes with juice, carrot,sugar, broth and lemon juice into the skillet. Simply season with coriander, salt and cayenne pepper. Boil the mixture well, just cook for 30 minutes, till vegetables are tender.
